1 very, very ripe mango, peeled & chopped (about 1 c)
1 TBS rice vinegar
1 TBS olive oil
3-4 TBS orange juice
juice of one small lime
Blend all ingredients in food processor* until smooth. Refrigerate until ready to use or up to 3 days.
*Alternately, mash all ingredients in small glass bowl until desired consistency.
